My family loved my cinnamon roll cookies so much, I wanted to try them again, but this time with apple pie filling! They are so good - literally like adorable mini apple pies! And I used pre-made pie crust and filling - so easy!
Here's how to make them:
Ingredients
2 refrigerated pie crusts, at room temperature (I used Pillsbury)
4 TBS salted butter, melted
6 TBS brown sugar
1 TSP ground cinnamon
1 can (21 oz.) apple pie filling (I used Duncan Hines/Comstock)
(optional) Caramel sauce/syrup - I used Hershey's pre-made to make it easy, or you can use my homemade salted caramel!
Instructions
Preheat your oven to 350° F.
Mix the melted butter, brown sugar and cinnamon in a small bowl and set aside.
Blend the pie filling until almost an applesauce consistency. You don't want big chunks or the pie crust will not roll well.
Roll out each pie crust into a rectangle or oval shape.
Spoon on the melted butter/sugar mixture and using an icing spatula, spread evenly over the crust, up to about an inch of the edges.
Add the pie filling and spread evenly over the cinnamon sugar/butter mixture.
Carefully roll the pie crust on the long side into a log and pinch to seal the ends.
Slice the log into 6-8 even pieces and pinch to seal the dough on the side.
Place the rolls on a greased baking sheet (or on parchment paper) and use the palm of your hand to smoosh the roll down so it's slightly flattened.
Bake for 15-18 minutes, until golden brown. Your house will smell sooooo good!
Transfer the cookies to a cooling rack and let them cool completely before adding the caramel sauce, if using.
Add the caramel onto the cooled cookies and enjoy!
