If you like cinnamon rolls and cookies, then you'll love these cinnamon roll cookies! They're not only easy to make, you only need a few ingredients. I added a cream cheese icing which made them taste like Cinnabon. And come on, who doesn't love Cinnabon?!
Here's how to make them:
Note: I used one pie crust and it made 8 cookies. You can use 2 pie crusts and double the recipe to make more, because trust me, you'll want more.
Ingredients
1 refrigerated pie crust, at room temperature (I used Pillsbury)
2 TBS unsalted butter, melted
3 TBS brown sugar
½ TSP ground cinnamon
For the icing:
1 cup powdered sugar, sifted (sifting it will give it a better consistency)
½ teaspoon vanilla
2 TBS unsalted butter, softened
3 oz. cream cheese, softened
1 TBS milk
Instructions
Preheat your oven to 350° F.
Mix the brown sugar and cinnamon in a small bowl and set aside.
Roll out the pie crust into a rectangle or oval shape.
Brush the pie crust with the melted butter.
Sprinkle the cinnamon/sugar mixture on top of the butter.
Carefully roll the pie crust on the long side into a log and pinch to seal the ends.
Slice the log into 8 even pieces and pinch to seal the dough on the side.
Place the rolls on a greased baking sheet (or on parchment paper) and use the palm of your hand to smoosh the roll down so it's slightly flattened.
Bake for 12-15 minutes, until golden brown. Your house will smell sooooo good!
Transfer the cookies to a cooling rack and let them cool completely before adding the icing.
Make the icing: In a medium bowl, use a hand mixer to beat the butter and cream cheese until creamy with no lumps. Add the vanilla, milk and sifted powdered sugar and beat until creamy. If you want it thinner you can add a bit more milk but you don't want it too thin.
Use a piping bag and small tip to pipe the icing onto the cooled cookies and enjoy!
