I love asian food and I love ribs. Put the two together and YUM! When my son got his braces off, he wanted ribs since he had to go without for 2 years. So I made 3 different types of ribs but these were the best. Plus, you'll want to make these in your slow cooker, trust me. Your house will smell amazing and the ribs come out perfectly tender and juicy. I used St. Louis style ribs since they're more meaty, but you can also use spareribs. This is a meal to impress your friends and family and one they'll ask for again and again.
Here's the recipe:
2 racks St. Louis style ribs, or baby back, or spareribs
Make a dry rub
1 TBS paprika (or smoked paprika if you have it)
2 TSP chili powder (add more if you like spicy)
1 TBS garlic powder
2 TBS salt
1/2 TSP black pepper
1/2 cup light brown sugar
Instructions:
Mix all ingredients together in a bowl.
Remove the membrane from the ribs (the tissue on the underside of the ribs. You remove it because it doesn't soften when you cook it and comes out tough and chewy. Place the ribs in the slow cooker - you can cut them to fit.
Massage the dry rub all over the ribs.
Make the sauce
1 TSP freshly minced ginger (peel it and use a grater, it's super easy) or 2 TSP ground ginger
1 TSP onion powder
2 TSP black pepper
6 garlic cloves, minced (this tool make is super easy!)
1 TBS chili garlic sauce (I like the Huy Fong brand)
2/3 cup balsamic vinegar
2/3 cup light brown sugar
2/3 cup honey 2/3 cup reduced sodium soy sauce
1 TBS cornstarch + 1 TBS water (you'll use this to thicken the sauce)
Instructions:
In a medium bowl, whisk the ginger, pepper, and onion powder. Incorporate the minced garlic, then add the chili garlic sauce, soy sauce, balsamic vinegar, brown sugar, and honey. Whisk until well mixed.
Pour half of the sauce over the ribs and save the rest for later (keep in the fridge).
Cook the ribs 6-8 hours on low until the meat is tender.
Remove the ribs from the slow cooker and place on a broil pan or baking sheet lined with foil. Brush some of the sauce from the slow cooker over the ribs and broil about 5-10 minutes, until edges start to look crisp.
Add the other half of the sauce in a medium saucepan over medium-high heat.
In a separate small bowl combine the cornstarch and water and add to the sauce. Whisk sauce until it starts to thicken.
Remove the sauce from the heat and brush onto the ribs.
Garnish with sliced green onion and enjoy!
