Salmon is such a mild, flaky fish that my family loves, plus it's got healthy fats and is so good for you. So I try to make it as much as I can. And like you, I'm always looking for an easy way to make it that's delicious. Well this recipe delivers!
Here's the recipe:
1.5 pounds salmon fillet
1 TBS olive oil
3 cloves finely minced garlic (this tool makes it super easy!)
Juice from 1/2 lemon (you can use bottled too)
1 TSP Italian seasoning
1/4 TSP salt
black pepper to taste
2 TBS diced cold butter
Instructions
Preheat oven to 400° F (200° C). Line a rimmed baking sheet with foil.
Lightly coat the foil with olive oil. Place the salmon fillets on the foil, be sure not to overlap the fillets .
Drizzle each fillet with 1 tablespoon olive oil and cover with the minced garlic.
Drizzle the fillets with lemon juice and sprinkle with Italian seasoning, salt and pepper. Evenly place a few pieces of the butter on each fillet and cover the salmon with the foil.
Bake for 10-15 minutes (depending on the thickness of your fillet). Check after 10 minutes, if the fish is flaky, it's ready to eat!
