I had a lot of leftover mashed potatoes from Thanksgiving and wanted to do something creative with them since we were all a bit mashed potatoed out. I took stock of what I had in my pantry/kitchen and decided to make these super satisfying mashed potato breakfast muffins! They easy and fun to make and really delicious!
Here's how to make them:
Ingredients
3 cups mashed potatoes
1-2 large eggs. Note: If your potatoes are a little watery or runny add the second egg.
1 cup shredded cheese (cheddar, parmesan, or whatever you like!)
1 cup chopped bacon or sausage
2-3 TBS all purpose flour (optional)
1 clove minced garlic
3 TBS chopped chives (note: I didn't have any when I made these but next time will definitely add them!)
If you have veggies you want to add, chop them and cook down before adding to the mix.
Instructions
Preheat your oven to 375°F.
Grease a 12-cup muffin tin with butter spray ,or real butter. You can also use cupcake liners.
In a large bowl, combine the mashed potatoes, egg(s), cheese, garlic and chives. If the mixture is too runny, add in 2 tablespoons of flour until you get a slightly thicker consistency.
Divide the mixture evenly amongst the 12 muffin cups.
Bake for 30-35 minutes until golden brown and the edges are crispy.
Remove from oven and let cool in the pan on a rack,
Serve immediately and enjoy!
