I love making burrito bowls! You can get so creative and save yourself a trip to Chipotle. The base can be white or brown rice, or even salad greens! I make these bowls with my carnitas and they were delicioso! Get creative and add your favorite ingredients. A perfect light lunch or dinner, and one you will want to make over and over again!

Make your rice or prepare your greens
Heat the beans, with a tiny bit of the juice from the can, over medium heat.
Stir in the cumin, salt, chili powder, garlic powder and onion powder.
Let the beans sit on low heat while you prepare the other ingredients
Remove the juice from the canned corn.
Heat about 1 TBS vegetable oil in a medium pan over medium heat.
Add the corn and, stirring frequently, let them become a little browned. Let sit on low heat until ready to use.
Use my pickled onions or saute sliced onions in olive oil until caramelized.
Cut up the avocado into slices and slice the lime into quarters
Make the bowls: Place rice or greens into bowl. Add the cooked carnitas, beans, corn, onions, avocado, top with cilantro, add your favorite hot sauce and enjoy!
