Lumpia-Inspired Skillet

Filipino Lumpia is delicious. Lumpia are types of spring rolls that are traditionally made with thin crepe-like skin called a lumpia wrapper. They're delicious, but I wanted to make something similar without the skin. I made it my own (as I like to do!), but this has been a standing order in my house for many dinners! It's loaded with veggies and has such a delicious flavor. You can add shrimp if you like, but I prefer it without. Eat it as is, or over brown rice or noodles. Either way, it's amazing, and healthy!

Here's how to make it:


  • 1 TBS coconut oil

  • 1 pound ground pork (I use a pork/lean beef blend)

  • 1/2 yellow onion, diced

  • 8 cloves garlic, minced

  • 3 TBS fresh ginger, minced (or 1 TSP dried)

  • 1/2 head green cabbage, thinly sliced

  • 6-8 oz. bean sprouts

  • 5 large cremini or 6-7 baby bella mushrooms, thinly sliced

  • 1/2 cup green onion, thinly sliced

  • 1/3 cup low-sodium soy sauce

  • 1/2 TSP granulated sugar

  • salt and pepper

  • 1/2 cup crushed roasted peanuts (or crunchy peanut butter - gives it a nice creamy texture)

  • Chili garlic sauce, for heat (I like the Huy Fong brand)


TIP: It helps to mise en place (prepare the ingredients before you start cooking - chopping the veggies, etc.). Saves time and makes it much easier!

  1. Add the coconut oil to a large skillet (I use my paella pan) over medium-high heat.

  2. Add the pork, and sprinkle some salt and pepper over it.

  3. Use a spatula to crumble the meat and cook for about 5 minutes, until it's browned all over.

  4. Add the onion, ginger, garlic, and mushrooms to the skillet.

  5. Continue cooking and stirring until the vegetables have softened, about 2-4 minutes. You'll get to enjoy lovely the onion/garlic/ginger fragrance at this point!

  6. Add the cabbage, bean sprouts and green onions and continue cooking, using a spatula or tongs to toss it until it starts to wilt, about 2 minutes.

  7. Add the sugar, soy sauce, and peanuts (or peanut butter). NOTE: Because my son doesn't like peanuts, we add them in when it's served, and it's perfect.

  8. Stir to combine. and let it cook for about 2 more minutes.

  9. Add salt and/or chili garlic sauce to taste, serve with rice or noodles, and enjoy!
