If you love Japanese and Asian food and have never had the pleasure to eat okonomiyaki (a Japanese savory pancake), then I'm here to tell you -you must! I'll tell you what, it's the most flavorful, umami, satisfyingly delicious meal I've probably ever had. There are so many layers of flavor and when you put them together it's a Japanese party in your mouth. You've got noodles, pork belly, pancake, cabbage and sprouts, egg and more. The beautiful thing about okonomiyaki is you can add whatever you want to it! Shrimp, eel... we've even added kalua pork and it was perfection. "Okonomi" means what you like and "yaki" means grilled, so grill (or cook) it how you like it! If you can't find some of the ingredients at your local store or Asian grocery, Amazon has a lot of them (links provided below).
Here's my recipe:
What you'll need
Griddle
Okonomiyaki spatulas (or good spatulas, but these work best)
Ingredients (for 2 servings)
2 TBS Canola oil
Okonomiyaki flour (make and adjust amount according to package)
2 TSP furikake (salty combo of dried seaweed and sesame seeds)
2/3 cup green cabbage, julienned
1/4 cup bean sprouts
tempura flakes (optional, only if you can find them)
8 slices pork belly, thinly sliced
1 package yakisoba noodles, cooked
2 eggs
For toppings:
Japanese mayonnaise (tangy and perfect for this if you like mayo)
Furikake
More okonomi sauce
1 TBS green onion/scallions, finely sliced
Dried basil and any white cheese (this is delicious - use a torch to cook the cheese after the okonomiyaki is finished and add basil after or it will burn)
Instructions
Brush about a TBS of the oil onto either a stove-top griddle on medium heat or electric griddle heated to 350°F.
Pour the flour batter onto the griddle into a paper-thin circle 8 inches wide.
Place the cabbage, tempura, and bean sprouts on top of the batter to fully cover it.
Top with 4 slices of pork belly and drizzle a little more of the flour batter on top.
Gently flip the pancake using two okonomiyaki spatulas, and press down.
Add 1 TBS oil to the griddle and add the cooked yakisoba noodles.
Drizzle the noodles with okonomi sauce and stir to coat all the noodles.
Put the cooked pancake with the cabbage on top of the noodles.
Crack an egg on the griddle and scramble it using the okonomiyaki spatulas.
Place the egg onto the yakisoba noodles and drizzle with okonomi sauce.
Top with the green onion/scallions and drizzle with the mayonnaise, furikake, and more okomi sauce.
To eat, cut into slices with a knife and eat with chopsticks or a knife and fork.
