Glazed Salmon with Honey Lime Garlic Brown Butter Sauce

If you love salmon as much as I do, then you NEED to try this recipe. It is hands down my favorite (and my family's) way to make and eat salmon. It's perfectly cooked in a cast-iron pan - you can make it in a regular frying pan if you don't have cast iron - and the glaze. Oh my, the glaze. It's slightly sweet with the tang of lime and the nuttiness of browned butter. And did I mention how easy it is to make, and it really takes no time at all. Serve it over your favorite grain and with your favorite veggies on the side and you've got a meal to remember.


Here's how to make it:


Ingredients

  • 4 salmon filets (skin on), about 2 pounds total

  • 8 TSP honey

  • 8 TSP AP flour

  • 2 TBS extra virgin olive oil

  • lime zest, about 2 limes

  • (optional) 2 cloves garlic sliced thin for fried garlic chips, instructions below


For the sauce

  • 6 TBS salted butter

  • 2 TSP honey

  • 2 cloves garlic, minced

  • 4 TBS fresh lime juice

  • 1/2 TSP ground black pepper


Instructions

  1. Place the salmon filets on a cutting board or flat surface and put 1 TSP flour on each side, spreading it so it covers all surfaces.

  2. Drizzle 1 TSP honey on each side of the filets. You can use your finger to spread it.

  3. Add 1 TBS olive oil to your cast-iron skillet, or any frying or sauté pan and heat on medium. Depending on the size of your pan and the filets, you may want to use two pans or cook in two batches to avoid overcrowding - the salmon won't cook as evenly if it's crowded in the pan.

  4. Carefully place the salmon in the pan, skin side down. Cook for about 3-5 minutes on each side, browning the salmon and ensuring it's cooked through. You want the skin to be a dark brown and crispy.

  5. Make the sauce: Add the butter to a small saucepan and heat on medium low.

  6. Stir the butter with a wooden spoon or spatula while cooking until it turns a light brown color and you begin to smell a nutty fragrance.

  7. Remove the saucepan from the heat and whisk in the garlic, honey, lime juice and black pepper.

  8. Pour the sauce onto the cooked salmon (skin side down) and sprinkle on the lime zest.

  9. If you want to add fried garlic chips, add about 1 TSP olive oil into a frying pan. Add the garlic chips and fry until both sides are brown (not burned) and crispy. Remove from pan and sprinkle on the salmon.

  10. Serve over your favorite grain (risotto is amazing with this salmon) and enjoy!
