Easy Coffee Cake


Who doesn't love a light, cinnamony, crumbly coffee cake? This coffee cake is perfect for an office potluck, a sleepover for your kids, or just because. The moist, buttery cake is perfect for ANY occasion. Plus your house will smell amazing. This is a simple recipe - but you can get creative by adding chopped walnuts or pecans, fruit, or nutella or chocolate! Serve it warm with a hot beverage (coffee, of course) and enjoy!


Here's how to make it:


Ingredients


For the cake

  • 1 cup canola oil

  • 2 eggs, beaten

  • 1 TSP vanilla extract

  • 1 cup milk (non-dairy is ok)

  • 1 cup granulated white sugar

  • 3 cups all-purpose flour

  • 3 TSP baking powder

  • 1/2 TSP fine sea salt

  • 1/3 cup salted butter, melted

For the streusel

  • 1 1/2 cups brown sugar

  • 2 TSP ground cinnamon


Instructions

  1. Preheat your oven to 350° F.

  2. In a large bowl. combine the oil, eggs, vanilla and milk and whisk until well combined.

  3. In a medium bowl, mix the sugar, flour, baking powder and salt until smooth.

  4. Pour the flour mixture into the egg mixture and, using a hand mixer, blend until well combined and smooth.

  5. Pour half of the batter into a lightly greased 9"x13" pan.

  6. Make the streusel: add the brown sugar and cinnamon to a medium bowl and whisk or stir until blended and smooth (no brown sugar chunks).

  7. Sprinkle half of the streusel mixture on top of the batter.

  8. Pour the remaining batter on top of the streusel, then sprinkle the remaining streusel on top.

  9. Drizzle with the melted butter.

  10. Cover the pan with foil and bake for 25-30 minutes.

  11. Remove the foil and bake an additional 10 minutes.

  12. Let cool for a few minutes, then serve and enjoy!
