If you love crab and salmon then you need to make this. It’s a delicious Old Bay-seasoned crab mixture inside beautifully cooked salmon - a seafood lover’s dream.
Here’s how to make it:
Ingredients
For the salmon:
2 lb fresh salmon, skin off (a wide filet works best)
2 TSP lemon zest
2 TBS melted butter
1-2 TSP Old Bay seasoning
For the crab stuffing:
8 oz lump crab meat (canned is ok)
1/2 large yellow or brown onion, finely chopped
2 TBS butter
2 TBS mayonnaise
2 TBS fresh parsley, chopped
3 cloves garlic, minced
1 TBS fresh lemon juice
2 TSP Old Bay seasoning, or to taste
1/2 cup panko bread crumbs
Instructions
Preheat your oven to 400° F.
Line a baking sheet with foil or parchment paper.
Melt the butter in a medium saucepan over medium heat and sauté the onion until softened and translucent, about 7-10 minutes.
Combine the mayonnaise, minced garlic, fresh parsley, lemon juice, panko and Old Bay seasoning In a bowl and whisk together.
Add the sautéed onion and fold in the crab meat.
Place the salmon on the baking sheet and sprinkle with 1 TSP of the Old Bay.
Spoon the crab mixture lengthwise down the middle of the salmon.
Fold the salmon over lengthwise so it looks like a log roll.
Sprinkle the remaining 1 TSP of Old Bay over the top of the salmon.
Whisk the melted butter and lemon zest and brush onto the top of the salmon.
Bake approximately 16-20 minutes, until the fish is cooked and easily flakes with a fork. Sprinkle with additional fresh parsley.
Cut diagonally into slices, serve with lemon slices over rice and enjoy!
