This blackened shrimp burrito bowl is bold, hearty and healthy! You won't miss the tortilla with this bowl of spicy shrimpy veggie goodness. It's great if you're meal prepping too! You can eat it with rice, cauliflower rice, lettuce, or quinoa. If you don't like shrimp, you can sub in chicken or steak! Just cook well and cut into bite-sized pieces or strips.
Here's how to make it:
Ingredients
1 pound uncooked large shrimp, peeled and deveined (frozen shrimp works, but be sure to fully thaw it first)
1 TBS chili powder
2 TSP paprika
1 TSP onion powder
1 TSP cumin
½ TSP garlic powder
1 TSP salt
1/4 TSP black pepper
1 TBS olive oil
1 can sweet corn
1 can black beans
2 cups brown rice cooked (or cauliflower rice, quinoa, lettuce, whatever you like!)
2 avocados, sliced
Instructions
Add the shrimp and all the seasonings to a large bowl and combine well..
Add the olive oil and shrimp to a skillet or pan. Cook over medium-high heat until the shrimp is no longer pink - about 5 minutes.
To assemble the bowls: divide the shrimp, corn, black beans, rice, and avocado evenly. If using for meal prep, add the avocado right before eating. Enjoy!
