Authentic Hawaiian Lomi Lomi Salmon




If you've ever been to Hawaii (or a Hawaiian luau) you've probably seen, or hopefully eaten, lomi lomi salmon. It's a traditional Hawaiian side dish and it's so fresh and delicious. It's really low calorie too - just salmon and fresh veggies. It's seriously salty salmon yumminess and this recipe is the real deal..


Here's how to make it:


Ingredients


  • 24 oz Atlantic salmon

  • Granulated sea salt (you'll need quite a bit)

  • 3 large tomatoes

  • 1 1/2 cup green onions

  • 1 large sweet yellow onion - if you can get Maui onions, do it!


Instructions


  1. Wash the salmon in cool water and gently dry it with a paper towel.

  2. Rub the salt all over the salmon and tightly wrap in plastic wrap and place into the fridge for 8 hours or overnight. This cures the salmon, preserving it so it doesn't spoil.

  3. When you're ready to make it, remove the salmon from the fridge and place it into a bowl of ice water. Let it soak, but drain and replace the water twice, every 30 minutes (1 hour total).

  4. Rinse the salmon and remove the skin.

  5. Cut the salmon into small, cubed pieces.

  6. Cut the tomatoes in halves and dice, removing the seeds first.

  7. Dice the onion and finely chop the green onions.

  8. Combine the salmon, tomatoes and onions into a clean bowl and mix well using your hands. At this point you're gently massaging the lomi lomi (lomi lomi means "to massage" in Hawaiian). :)

  9. Put it in the fridge and let it chill before serving and nanea (enjoy)!
