Lemon curd is life. It's tart, sweet, creamy, and so delicious. It's great with scones (English tea anyone?), pies, cupcakes and as a filling for donuts. Just give me a spoon and I'd eat it right out of the bowl! If you love lemon as much as I do, you'll want to make this!
Here's how to make it:
Ingredients
6 egg yolks (if you're making meringue, save the egg whites!)
1 cup sugar
½ cup lemon juice
1 TBS lemon zest (I love this zester, makes it so easy)
6 TBS butter
Instructions
Make the lemon curd by whisking the yolks and sugar in a heatproof bowl over a pot of simmering water. I used a double boiler, very easy to do.
Once the sugar dissolves (it takes a few minutes, be patient), add the lemon juice and lemon zest. Stir until the mixture thickens, about 10 minutes.
Once the curd coats the back of a spoon, add the butter and stir until melted.
Remove from heat, cover with plastic wrap, and refrigerate. Make sure the plastic wrap touches the surface of the curd so that a film doesn’t form on top.
