I freaking love coconut. I really do. And I love macaroons. Put them together with some homemade salted caramel and bam! These are perfectly sweet, chewy and oh so satisfying, And only a few ingredients needed. You'll be addicted and you'll want to make these all the time!
Here's how to make them:
Ingredients
5 1/2 cups sweetened coconut flakes
2/3 cup flour
1 - 14oz can of sweetened condensed milk
2 TSP vanilla extract (the darker the vanilla, the better. I like to use madagascar vanilla)
1/4 TSP salt
Instructions
Preheat oven to 350° F and move your oven rack to the 3rd to last rack.
Line a large baking sheet with parchment paper (you may need 2 baking sheets, but I used one)
In a large bowl, stir the coconut, flour and salt until well mixed.
Stir in the condensed milk and vanilla until blended together.
Use a cookie scoop or your hands (it may be sticky) to make 2-3 inch balls and place them on the pans. Be careful not to have them too close together.
Make a small indentation in the middle using your thumb (this is where the caramel will go later).
Bake about 15-17 minutes, until the bottom is golden brown and the coconut is toasted.
Cool in pans for 5 minutes. You may need to make the indentation again but you can use the bottom of a small spoon.
Transfer cookies to a wire rack to cool completely.
Add the caramel to the centers (check out my recipe for salted caramel!) and enjoy!
