Chewy Coconut Cookies


If you love coconut and ooey gooey chewy cookies as much as I do, you'll love these chewy coconut cookies! It's like butter and coconut are dancing on your tongue. And you won't be able to eat just one - I guarantee these will be gone in hours. And like most of my recipes, they're super easy to make!


Here's how to make them:


Ingredients


  • 1  1/4 cups all-purpose flour

  • 1/2 TSP baking soda

  • 1/4 TSP granulated salt

  • 1/2 cup butter

  • 1/2 cup packed brown sugar

  • 1/2 cup granulated sugar

  • 1 egg

  • 1/2 TSP vanilla (or coconut for extra coconut flavor!) extract

  • 1  1/3 cups sweetened flaked coconut


Directions

  1. Preheat your oven to 350° F.

  2. Combine the flour, baking soda, and salt in a medium bowl and set aside.

  3. In another medium bowl, cream the butter, brown sugar, and white sugar using a hand mixer until smooth.

  4. Add the egg and vanilla into the mixture until it's light and fluffy.

  5. Gradually add in the flour mixture, then add the coconut.

  6. Roll the dough into teaspoonful-sized balls onto an ungreased (or you can use parchment paper) baking sheet. The cookies should be about 3 inches apart, but it's okay if they run together, they're still yummy!

  7. Bake the cookies for 10-12 minutes, or until they're lightly toasted. It's okay if they're soft, that's the chewy goodness!

  8. Cool the cookies on a cooking rack and enjoy!



TIP: You can add white chocolate chips (or any type of chips you like) to make these extra scrumptious!
