Remember getting fruit roll-ups in your lunch box when you were a kid? I always thought I was getting a special sweet treat, not realizing that they were actually fruit. But that store-bought version has corn syrup, artificial colors and preservatives. No thank you. What if you could make it yourself, with only a few all-natural ingredients? I'm here to tell you, you can! And you can mix it up by using different fruit - raspberries, blueberries, even mango or peach! I made good old fashioned strawberry, because I had them in the house, but next time I think I'll experiment with different flavors. These are a perfect snack or dessert for the kids, and for you!
Here's how to make it:
Ingredients
3 cups fruit (strawberries, raspberries, etc - you can mix them up and blend the flavors!)
3 TBS honey
2 TBS lemon juice
Instructions
Preheat your oven to 170° F.
Blend the fruit in a food processor or blender until smooth. If using strawberries, cut the stems off first.
Mix in the honey and lemon juice.
Pour the mixture into a baking pan lined with a silicone mat or parchment paper and using a spatula, spread it out to about 1/8" thickness.
Cook in your oven for about 4 hours, or until the middle is not longer tacky. You're basically dehydrating the fruit to give it the right texture.
Remove it from the oven and let it cool completely on the pan.
Once cooled, carefully peel and remove the fruit from the baking sheet and move to a cutting board.
With a sharp knife, trim off the edges then cut into 1" strips.
To store them, roll them up and wrap them in plastic wrap. But they probably won't last that long!
